Gluten Free Pumpkin Bars

A wonderful moist dessert that is always a crowd pleaser. 

It is so easy, it is a great one for kids to help make.

Thanks to 123 Gluten Free for their wonderful Sweet Goodness Pan Bar mix, it can be a breeze to whip up a quick dessert that is a crowd pleaser.  Just follow the directions on the 123 Gluten Free Sweet Goodness Pan Bar mix for the pumpkin bars.  Order them at www.123glutenfree.com.   Then top with cream cheese frosting or casein free frosting:

Cream Cheese Frosting

  • 1 package (8 oz) cream cheese
  • 1 T milk
  • 1 t vanilla
  • 4 cups powdered sugar

Beat cream cheese, milk and vanilla on low speed until smooth.  Gradually beat in powdered sugar until smooth.  Store any extra in the freezer for next time. 

Casein Free Frosting

  • 1 pound box of powdered sugar
  • 1/4 cup milk
  • 1 t GF vanilla
  • 1 stick butter ( Earth Balance for CF)

Beat with an electric mixer, scraping the bowl often, until it reaches the desired consistency.  Add milk or a non-dairy substitute to thin.

This makes a ton - store extra in the freezer and you will be ready for the next round of frosted cookies.
