Gluten Free Hummus

Your friends will be shocked that you made hummus and love the taste - just don't tell them how easy it is.  You'll love this for the nutritional value as well.

  • 2 cups canned chickpeas, drained
  • 1 1/2 t kosher salt (we really like kosher salt, but regular salt works fine)
  • 2 - 4 minced garlic cloves
  • 1/3 cup tahini (this is either located in Asian part of the grocery store or with the peanut butters.  Joyva in a brown and orange can is gf.)
  • 6 T lemon juice (sure fresh would be nice, but I use the kind out of the bottle)
  • 3 T olive oil
  • 2 dashes of hot sauce (we love Thai Kitchen Spicy Thai Chili which is gf.  We use it whenever we want to put a little spice into something.)

Put everything (start with a smaller amount of hot sauce and add to your families tolerance level) in a food processor and process until you reach a coarse puree.  Add more olive oil to make it thinner if you like. 

Serve with Tostitos.
