Giant Oatmeal Cookie

 

  • 1 cup butter softened (use Earth Balance for CF)
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar (use the fine baking type.  Not sure if it makes any difference, but it makes me feel more like a real cook).
  • 1 t vanilla
  • 2 eggs
  • 1 1/2 cups gluten free flour
  • 1 1/2 t xanthan gum**
  • 1/2 t salt
  • 1 t baking soda
  • 1 t cinnamon
  • 3 cups oats (we buy certified gluten free oats from Gifts of Nature. A little too natural for my little ones to eat prepared "normally," but great in cookies and the Baked Oatmeal).

Preheat the oven to 350 degrees F.

Beat butter and sugars together until smooth, about 5 minutes.  Add vanilla and eggs, and beat well.

Mix dry ingredients together - flour, xanthan gum**, salt, baking soda and cinnamon.   Add to the wet ingredients, do not over mix.

Stir in the oats.  You can add one cup raisins, but my kids do not like them so we leave them out.

These can be prepared the traditional way by dropping on a cookie sheet and baking for 10 -12 minutes. 

We like to use this to make giant cookies by spreading all of the mix on a round pizza pan leaving room for it to expand around the sides as it bakes.  Bake for 20 minutes.  Then frost with Cream Cheese or Casein Free Frosting.  We have even used this as a birthday cake.

**No need to add additional xanthan gum if your gluten free flour mx already contains it.
