Basil Pesto NoodlesThis is a five star item for my eleven year old. My eight and five year olds snub their noses at it. It is green!! We compromise by making them buttered noodles with olive oil, butter and garlic salt. Then we add the pesto to our noodles.
Pulse the basil, garlic, pine nuts and cheese in a food processor until finely chopped. Drizzle the olive oil through the feed tube until pureed. Add salt and pepper. This freezes well in 6 - 8 ounce plastic containers. Drizzle with a layer of olive oil before freezing to keep it green. Serve over gluten free noodles. |
